i have a small roast in the freezer from the co-op but have more people coming than planned for a dinner this weekend. Wondering if any of the meat providers in the co-op have another small roast (1-2 lb) or a larger one (3-4 lb) available?

3 qts green tomatos
1-1/2 qts tart apples, peeled and chopped
2 cups raisins
2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1-1/2 teaspoons salt
2 or 3 cups brown sugar (depending on how sweet you like it)
3/4 cup cider vinegar (white may also be used)
1/4 cup lemon juice

Combine all ingredients in a large sauce pot. (Omit cloves if you plan to freeze mincemeat.) Cook mixture slowly until tender and thick, about 1 hr or more. Stir frequently.

To Store: can as you would high-acid canning process,leaving 1/2 inch headspace.

To Freeze: pack cold mincemeat into freezer jars or containers, leaving about 1 inch headspace.

Yield: about 5 qts green tomato mincemeat.]]>
